Sugar Cookie Tacos!

Have you ever had fruit pizza? Wasn’t it amazing? Well, my friends, sugar cookie tacos are just like fruit pizza except that you form individual cookies to look like taco shells. So they are cute AND delicious!

I had a Thirty-One Gifts party on Cinco de Mayo so that was the perfect time to make these.

Step one: Make sugar cookies (I used place n’ bake). While they’re still warm, form them around something long and round, like a broom handle.

Once they’re cooled, flip them over and viola! Taco shells!

Step two:  Fill them with this delicious cream cheese frosting: http://notsohumblepie.blogspot.com/2011/03/cinnamon-rolls-with-whipped-cream.html#more

Ms. Humble’s Whipped Cream Cheese Frosting
16oz cream cheese, room temperature
1 1/2 cup powdered sugar
1 teaspoon vanilla
1 cup heavy cream, cold.

Beat the cheese, sugar and vanilla until smooth and fluffy. In a separate bowl, beat the heavy cream to nearly stiff peaks, then add the whipped cream into the cheese mixture and quickly and briefly beat to combine. Do not over beat.

I put the frosting in a frosting bag and piped in on. That was the easiest way, plus it looks cute.

Then you top them with fresh fruit. I used strawberries and kiwi.

They are delicious and cute! And healthy! Look at that fruit! 😀
