My mother-in-law gave me some over-ripe bananas yesterday so I waltzed over to Pinterest to see if I could find a new recipe to use them in. Low and behold, I found these. An excuse to eat chocolate for breakfast? Yes, please!
I adapted the recipe based on the ingredients I had on hand. They turned out AMAZING, if I do say so myself.
Choco-banana muffins
3 oz unsweetened baking chocolate
1 tbs butter
3 large ripe bananas, mashed
1 cup sugar
1 egg
1 cup flour
1/2 tsp salt
1 tsp baking soda
1 tsp baking powder
In a large bowl, melt the baking chocolate and butter in the microwave (about 1 minute, 30 seconds). Continue stirring until the chocolate is completely melted. Toss in the mashed bananas, sugar, and egg, and combine well.
In a separate bowl, mix together the flour, salt, baking soda, and baking powder. Carefully add it to the banana mixture. Batter will be lumpy.
Scoop into baking cups and bake for 18-20 minutes.
The Monster Mama drizzled hers with melted chocolate. I figured these had enough calories already.
Makes 15 muffins. About 150 calories per muffin.
